Tortang Talong at giniling na baboy (pork and eggplant omelet ) Recipe

Tortang talong or pork and eggplant omelet is one of my favorite food and specially most of our fellow filipinos. This dish is very tasteful,full of flavor from every ingridients by itself. It's sounds delicious isnt' it?
I want it to share with you.
So here's my recipe.
1/4 kilo ground pork
1 tbps olive oil
4 pcs. long egglant, grilled, and peeled
2 gloves garlic chopped
1 medium onion chopped
1 medium carrot chopped
1 red or green bell pepper chopped
1 medium potato chopped
salt and pepper to taste 
2 eggs 
1/2 cup flour
1/2 cup vegetable oil for frying 
1 tbsp raisins (optional)
1 banana leaf cut into plate size
 For sauce:
1/4 cup vinegar
1 1/2 tbsp fish sauce
1 garlic crushed

1.Preheat the pan, put oil and sautee garlic, onion,carrots ,bell pepper and potato, then put pork into it .Leave for about 10 mins until meat and vegetables are done.Set aside.
2.Grill eggplant to become color black or even loosen the skin from the meat of eggplant and carefully peel out the skin  and let it cool for about 5 minutes.
3.In a plate, place banana leaf and cut in size of it and brush little oil on it and set aside.
4.In clean container, combine eggs,flour,salt and pepper, meat and vegetables.
5.Heat the frying pan with oil and arrange the eggplant on the plate with banana leaf and pour meat mixture onto and carefully pull in into hot pan .
6.Fry for about 10 minutes and take the pan out of fire and put plate with banana leaf on top and carefully flip over and put again in pan and continue frying until its done. Do it in again on the next three sets of eggplant.
7.Serve with ketchup or garlic vinegar sauce together with steamed rice.Enjoy!
For sauce:
1.Easily combine all ingredients in one clean container .
2.Serve with some of fried dishes including eggplant omelet.Enjoy!

Tip: For this recipe if banana leaf is not available, you can still fry this omelet ,just carefully arrange the eggplant in pan and put the meat mixture until fully cover,and carefully flip over with frying tool.
