Pininyahang Manok ( Chicken with Pineapple )Recipe
So here's my version of Pininyahang Manok;
1/2 kilo chicken legs and wings
1 can pineapple chunks set aside syrup
1 tbsp olive oil
2 gloves garlic crushed
1 medium onion chopped
1 tsp ginger chopped
2 fresh tomatoes chopped
1 carrot cubes
1 potato cubes
1 cup chicken broth
1 red or green bell pepper sliced
1 cup coconut milk
salt and pepper to taste
1.Marinade chicken with pineapple syrup for overnight,cover with plastic and refrigerate .
2. Preheat the pan and put the oil,then sautee garlic until the color will be light brown the put together ginger and onion.
3.Stir until the onion with be soften ,put tomatoes and sautee until it cook.
4.Put the chicken ,and vegetables except bell pepper and pour broth ,simmer for about 20-25 minutes.
5.Pour coconut milk and season with salt and pepper and simmer until 5-10 minutes.
6.Add bell pepper and stir.
7.Serve while hot with steamed rice.Enjoy!
