Pinakbet was originately dish from Ilocos Region namely PAKBET cook with fresh vegetables,meat,shrimp paste. Now, i'm going to show you how to cook Pinakbet in my version.
So let's see how;
1/4 kilo pork meat, sliced thinly
1 tbsp olive oil
2 gloves garlic chopped
1 tbsp ginger minced
1 medium onion chopped
2 small tomatoes chopped
1 tbsp shrimp paste
2 cups pumpkin cubes
1 medium bittermelon(ampalaya) sliced
1 tied string beans (sitaw) cut into 2 inches
2 medium eggplant sliced thinly
10 medium okra cut into 2 pcs
1 cup coconut milk
salt and pepper to taste
1. Preheat pan and put oil .Sautee garlic until lightly brown,put onion and ginger and sautee until onion become soft.
2.Put tomatoes and stir until become watery and soft,put shrimp paste and sautee for 2 minutes.Add the meat and wait for about 10 minutes.
3.Add all the vegetables and simmer for about 8-10 minutes until pumpkin will be cook.
4.Add coconut milk and season with salt and pepper and simmer for another 5 minutes.
5.Do not stir and open the cover very often because all the nutrients will evaporate ,wait for the veretables to be cook.
6.Serve with rice.Enjoy!
