Paella- It is originately from spain, a rice dish that combined with meat and vegetables and spiced with different kinds of spices depending of what place in spain. When spanards brought to our country, it become too many versions on any part of the Philippines,different cook and different taste but still flavored rich dish.
Here are our version of our Paella;
1 tbsp olive oil
2 gloves garlic crushed
1 medium red onion chopped
1/2 cup fresh tomato chopped
1 tbsp tomato paste
1/4 kilo pork meat sliced thinly strips
1/4 kilo chicken breast, sliced thinly strips
1/4 kilo pork or chicken liver sliced thinly strips
1 pcs choriso, sliced
1 cup clam
1 cup shrimp unshelled
1 cup mussles
1 medium carrots sliced thinly strips
1 red or green bell pepper sliced
1/4 cup green peas boiled
3 pcs safron flower
2 cups rice,washed and drained
3 cups chicken broth
2 hard boiled egg
salt and pepper to taste
1.Heat the pan ,put the oil and sautee garlic , onion. Put fresh tomatoes and tomato paste and stir carefully.
2.Put the meat, chicken,liver,choriso and mix well.
3.Cook for about 15 minutes.
4.Add clams,shrimp,mussles together with the vegetables,safron,and rice.Mix until combine.
5.Pour broth into mixed ingredients and let it cook all the ingredients specially the rice for about 15-20 minutes..Season with salt and pepper.
6.Prepare plate for garnishing with eggs, bellpepper.
