MENUDO( Pork stew) is one of every filipinos' favorites especially taste in special occassions like fiesta, wedding, christmas and new year and even in simple daily menu.One of the best delicacy of the Philippines.
Here's my recipe that you can try to cook it on your own.
Pork Menudo Ingredients:
1/2 kilo pork cut into cubes
1/4 kilo pork liver or chicken liver cubes
1/4 cup calamansi or lemon juice
3 tbsp. soy sauce
1 tbsp. olive oil
1 medium onion chopped
2 gloves garlic chooped
2 small tomatoes diced
1 medium potato cubes
1 medium carrot cubes
1 red or green bell pepper cubes
2 tbsp. green peas
2 tbsp raisins(optional)
2 tbsp tomato paste
1 tsp sugar
salt and pepper to taste
1. In one container place meat,liver ,calamansi juice,soy sauce and leave it in 15 minutes.Set aside.
2.In a medium size casserol in low fire heat, sautee garlic,onion,tomatoes and put marinated meat and simmer for about 10 minutes.
3.After 10 minutes, put potatoes,carrots and simmer for about 20-25 minutes until the meat and vegetables are done.
4.Put tomato paste,sugar, green peas, raisins and bell pepper and stir easily ,simmer for 3-5 minutes.
5.Season with salt and pepper.
6. Serve with steamed rice.Enjoy!
