Ensaladang Talong Recipe( Eggplant salad)
In every dish, some of them need to have side dish or condiments. Ensaladang talong is one of side dish can be partner with grilled pork, chicken, fish or seafoods, or even only with rice. This side dish taste fresh and give us mouth-watering experience to start our main course. Here's my recipe;
4 pcs. eggplants
2 tbsp calamansi juice
1 gloves garlic minced
1 medium onion chopped
2 fresh tomatoes chopped
1 tbsp shrim paste
1 green mango chopped
1 salted egg chopped (optional)
1/2 tsp salt
1/2 tsp pepper
2 pcs calamansi cut into half
bird's eye chilli (optional)
1.Grill eggplant until outside part will be burn and loosen from the inner side for about 3-5 minutes.
2. Peel off skin and wash off ,drain and damp with paper towel to take off excess water.
3.Cut eggplants into cubes, and in clean mixing bowl put eggplant together with all ingredients and mix well.
4.transfer in a plate and garnish with chilli and calamansi .
5.Serve with rice or with grilled meat or fish. Enjoy!
