BATCHOY (Pork and noodle soup)- This soup was originate from Iloilo, Philippines, one of the best food in province.It is good to eat on breakfast ,snacks and specially rainy season .
And today, i am sharing this recipe .Hope you like it.
1/2 kilo Pork slice into bite size
1/4 kilo pork liver slice
1 tbsp cooking oil
2 gloves garlic chopped
1 medium onion chopped
30 grams ginger chopped
2 tbsp fish sauce
4 cups thin rounded egg noodles
1 L chicken or pork stock
1 tsp salt
1/2 tsp pepper
4 fresh eggs
2 tbsp toasted garlic
1/4 cup pork flakes (chicharon)
2 tbsp spring onion chopped
1. Preheat casserol and sautee oil with garlic, onion ,ginger,pork, and liver for 2-4 minutes and pour fish sauce on it and simmer for about 10-15 minutes in medium heat.
2.Boil eggs until cook for5-10 minutes. Slice and set aside.
3.Pour chicken stock into sauteed ingredients and simmer for about 20 minutes.
4.Boil egg noodles in 5 -10 minutes until done and soak in cold water .Drain and put into soup bowl for serving.
5. Arrange pork,egg, liver on top of noodles and pour soup stocks .
6.Garnish with spring onion, toasted garlic,and pork flakes with calamansi.Serve while hot.Enjoy!
