Chicken thighs with tomatoes and mozzarella cheese-A very tasty recipe


For 4-6 people

-8 Tablespoons olive oil
-4 Cloves of garlic, chopped
-3 Onions, peeled, chopped
-500 Grams of crushed tomatoes
-2 Teaspoons dried oregano
-1 / 4 teaspoon dried red pepper
-1 / 2 cup chopped fresh basil
-3 / 4 cup breadcrumbs
-3 / 4 cup grated Parmesan cheese
-1 / 2 cup flour, all-purpose
-2 Large eggs, beaten
-9 Boneless chicken thighs (skinless), if large pieces, cut them in half
-3 / 4 cup grated mozzarella cheese


Heat 4 tablespoons oil in a large skillet over medium heat. Add garlic and onions and sauté until softened, about 4 minutes.

Add the tomatoes, oregano and red pepper, peppers. Simmer until sauce thickens, about 10 minutes. Stir in basil and season to taste with salt and pepper.

Mix the breadcrumbs with the parmesan in a small bowl. Put what flour and eggs in separate shallow bowl.
Mix the chicken with flour, eggs, then then breadcrumb mixture.

Preheat oven to 180 degrees. Heat the remaining oil in a large heavy nonstick skillet over medium-high heat.
Saute the chicken drumsticks until golden and cooked through, about 4 minutes per side.

Place the chicken pieces on a baking sheet. With a spoon, pour over the sauce. Sprinkle with mozzarella cheese. Bake for 10 minutes, or microwave on high heat for 10-20 seconds, just until the cheese melts.
